Gingerbread Men Cookies

The holiday season is a fantastic time of year, even though December can often be hectic. As a mom, I take great care in making the holidays festive for my family, whether it’s in finding special gifts for those naughty and nice, planning a holiday meal or baking cookies with my sons. The timeless traditions we share warm our hearts and refuel our love each and every year. 

As we prepare to make cookies and cocktails for our friends and family, we make an effort to keep a smidgen of health among these decadent desserts. And for our Gluten Free friends, fear not! We have simple and delicious recipes for Gluten Free cookies and cocktails that will make every day feel like a winter treat!

Gingerbread Cookies

3 cups Deanna’s Gluten Free Pastry Flour

1 1⁄2 teaspoons baking powder

3⁄4 teaspoon baking soda

1⁄4 teaspoon salt

1 tablespoon ground ginger

1 3⁄4 teaspoons ground cinnamon

1⁄4 teaspoon ground cloves

6 tablespoons unsalted butter

3⁄4 cup dark brown sugar

1 large egg

1⁄2 cup molasses

2 teaspoons vanilla

Preheat oven to 375°F. In a small bowl, whisk together Deanna’s Gluten Free Pastry Flour, baking powder, baking soda, salt, ginger, cinnamon and cloves. 

In a large bowl, beat butter, brown sugar and egg on medium speed until well-blended. Add molasses, vanilla and lemon zest, then blend until smooth. Gradually stir in dry ingredients until smooth. Divide dough in half and wrap each half in plastic; refrigerate for at least 2 hours. 

Line baking sheets with parchment paper. Place dough on a lightly floured surface and sprinkle flour over dough and rolling pin. Roll dough to 1/4" thick; use cookie cutters of your choice, and place the shapes 1.5" apart. Bake 8–10 minutes, though a shorter time will produce softer cookies. Remove from oven and let cool.
