Large chain stores and restaurants tend to be convenient and "comfortable" for people to shop at because they provide consistent products. As nice as it is to enter a "familiar" store, exploring local shops and venues has numerable benefits. Small businesses reflect their owners and the locals who call their city home. 

The old adage "it’s the little things that count" is most definitely validated in Krisp Pizza, a recent addition to the Krisp brand. After sitting down and talking with co-owners and brothers, Sid and Omar Mikhail, I find there is a clear reason their pizza is beyond phenomenal. In the process of making the dough for their pizza, the brothers bring in flour from Italy and allow the pizza dough to rise for forty-eight hours. "Allowing the dough to rise for forty-eight hours not only allows for better flavor, but it also starts the ‘digesting’ process. What that means is that your body doesn’t have to work so hard breaking it down. It makes the pizza lighter on your stomach," says Omar Mikhail.

Not only do they get their flour from Italy, but they also only use the finest cheese. The brothers use cheese from Wisconsin, which is the cheese capital in the US. The sausage they use is made in-house, and they are currently working on a recipe for chicken sausage to be made in-house as well. Before the pizzas are put on the menu, Sid Mikhail shared with me that they come up with at least fifteen to twenty recipes, make each one, and then taste and evaluate each one so that only the best products are placed on the menu.

With every detail carefully considered as they produce their pizza, their craft beer selection goes through just as rigorous a scrutiny. Having seen the craft beer and microbrewery movement coming, the brothers incorporated the Best Damn Beer Shop into their existing wholefoods store. The selection of beverages at Krisp is wide and anyone (over the age of 21) can find something. Sid and Omar Mikhail have some of the best craft beers not only from across the country, but from around the world. 

Not having much experience about craft beers, I asked Sid Mikhail to explain what a craft beer was. Sid told me, "A craft beer is a small batch, made from organic ingredients. Not USDA organic, but organic as in natural and fresh…The flavor is unique, since it is a small batch." The key about a good craft beer is freshness. The creation of the craft beer is not the only factor that plays a role in taste, but also the store where it was purchased. Because the level of freshness has an impact on the flavor, it is up to the store to properly rotate the beer on the shelves, Sid shared with me. It is a whole process, providing the best damn beer to their best damn customers.

The brothers pride themselves in only using the best ingredients and providing their customers with top notch products all at a reasonable price. Every aspect of their store is thoroughly thought out and considered before implemented or used, offering only the best for their customers.
